It's not so easy for Americans to live and work in Europe. You can't just show up and look for a job. Legally, you need to have a visa which allows you to live in & work in the country you choose. Typically (at least here in Italy), you cannot apply for the visa while you're in the country and you need to have a job offer and paperwork from the employer and Italian government to submit with the visa request. A better way to go might be to apply to a school here and get a student visa.

Please be aware that as an American, you will have to file tax returns in both the US and the country where you're living.
